Sweet Potato Salad

If you’re looking to bring something new (and delicious) to your Thanksgiving table this year, this sweet potato salad recipe is the perfect side dish! 

Ingredients

  • 3 Large Sweet Potatoes
  • 1 Red Onion
  • 1/2 cup Dried Cranberries
  • 1/2 cup Feta Cheese
  • 1/4 cup Parsley
  • 1/2 cup Walnuts (optional)
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp Honey
  • 1 tsp Paprika
  • Salt & pepper to taste
  • 1/4 cup Extra Virgin Olive Oil.

Directions

  • Preheat your oven to 400 degrees.
  • Toss sweet potatoes and red onion in oil. Add salt & pepper to taste.
  • Bake for about 20 minutes and then let cool.
  • Make your dressing in a small bowl. Combine your extra virgin olive oil, apple cider vinegar, Dijon mustard, honey, salt & pepper, and paprika.
  • Toss your sweet potatoes with the dressing. Then add your cranberries, walnuts, feta, and parsley.
