If you’re looking to bring something new (and delicious) to your Thanksgiving table this year, this sweet potato salad recipe is the perfect side dish!
Ingredients
- 3 Large Sweet Potatoes
- 1 Red Onion
- 1/2 cup Dried Cranberries
- 1/2 cup Feta Cheese
- 1/4 cup Parsley
- 1/2 cup Walnuts (optional)
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Dijon mustard
- 1 tbsp Honey
- 1 tsp Paprika
- Salt & pepper to taste
- 1/4 cup Extra Virgin Olive Oil.
Directions
- Preheat your oven to 400 degrees.
- Toss sweet potatoes and red onion in oil. Add salt & pepper to taste.
- Bake for about 20 minutes and then let cool.
- Make your dressing in a small bowl. Combine your extra virgin olive oil, apple cider vinegar, Dijon mustard, honey, salt & pepper, and paprika.
- Toss your sweet potatoes with the dressing. Then add your cranberries, walnuts, feta, and parsley.
